A quick afternoon snack, this avocado toast is on frequent rotation at my house. Obsessed with the Cafe Gitane version I once had in NYC in a cramped corner table, I decided to recreate it at home and whaddya know? It is super simple and just as tasty as the Gitane version. Okay, maybe not quite as good but pretty close. And did I say how easy it was? Mash a ripe avo, spread on toast, sprinkle with some red pepper flakes, drizzle with a little olive oil (good quality of course), and voila, a healthy afternoon snack!
Avocado is rich in the good kinds of fats—the monounsaturated kind—that help lower cholesterol. They also help keep you full until dinnertime so you can sneak in that afternoon workout or siesta. Plus, according to Avocado Central (a real website), Haas avocados have more than 20 vitamins and nutrients per every 1 ounce serving. Sounds like a lot of bang for your buck to me!
Avocado Toast
{Serves 1 or 2 if you are feeling generous and want to share}
1/2 ripe Haas Avocado
2 pieces of your favorite bread (whole wheat or seven grain)
good quality olive oil
red pepper flakes
salt and pepper
optional: hot sauce
Put toast into toaster and toast to desired doneness. While toast is doing its thing, mash avocado with a fork. Season with salt and pepper. Divide avocado evenly between two pieces of toast. Drizzle with olive and sprinkle with red pepper flakes. Add a dash or so of hot sauce if you want to give it another spicy kick.
